    Vietnamese Vegetable Dish

    Ingredients:

    1 cup cauliflower, thinly sliced
    1/4 purple cabbage, thinly sliced
    1 leek, thinly sliced

    Ingredients for Sauce:

    1 Tbs. soy sauce
    2 Tbs. water
    1/4 tsp. sugar
    1 Tbs. vegetable oil
    1 Tbs. water
    1/2 cup straw mushrooms (available canned in Oriental markets)

    Preparation:

    In a bowl, combine cauliflower and purple cabbage.

    In a small bowl, combine soy sauce, water and sugar and stir together; set aside.

    Heat vegetable oil in a skillet over high heat. Add the leek, thinly sliced from the stem down, and stir gently. Add cauliflower and purple cabbage and stir to combine. Add 1 tablespoon water. Cover pan, reduce heat to medium and cook for 2 minutes. Uncover pan and add straw mushrooms, sauteeing mushrooms slightly. Add sauce to pan, cover and cook for 2 more minutes.
