Ingredients: 4 extra-large eggs, beaten 2 Tbs. chicken fat or vegetable oil 1 cup matzo meal Salt and pepper to taste 1/2 cup seltzer water or club soda Preparation: To beaten eggs add chicken fat or vegetable oil, matzo meal, salt and pepper to taste; stir to combine, then add seltzer water or club soda. Mix well and then form into balls -- don't pack the balls too tightly in order to keep the texture a little less dense. Drop into a pot of boiling salted water and simmer for approximately 30 minutes.
