Armed with her new knowledge of all things poultry, April heads over to meet up with "barbecue queens" Judith Fertig and Karen Adler, where the three set to work prepping the following dishes for the grill:
- Bacon-wrapped turkey fillets
- Cubano chicken with Picadillo olive salsa
- Chicken Wings and Things with Sage butter sauce
- Salsa Catfish
- Pacific Rim Salmon
- Grilled Octopus
- Lemon Basil Shrimp
Poultry and Seafood Grilling Tips: If you're a grilling novice when it comes to fish, consider starting with catfish. It's less expensive than most fish, so it won't be such a big deal if it chars falls through the grates!- When grilling fish on a plank, be sure to soak the plank in water for at least 30 minutes so that the wood doesn't burn.
- Never leave fish in its marinade for more than 30 minutes, because the acid from the vinegar or wine will break down the texture of the fish and cause it to crumble when grilled.
