 Barbecuing your next turkey will provide a unique flavor and rich brown color for your hungry guests to enjoy.

For your next dinner party, consider an alternative method of cooking a whole turkey. Jerry DiVecchio, senior editor of food and entertaining for Sunset magazine, explains how to barbeque a turkey for a luscious brown color and tender, smoky taste. It will cook in about the same amount of time and will leave the oven free for other dishes. The secret, says DiVecchio, is to use indirect heat to cook the turkey. The fire should be as hot as an oven heated for roasting, but not positioned directly under the turkey. A drip pan placed beneath the bird will catch those precious aromatic juices used to make gravy, as well as provide a barrier between the meat and the flames. For a different flavor, scatter a small amount of smoking chips over the charcoal. If you are using a gas grill, set the chips in a foil pan beside the heat. A gratifying smoky aroma will slowly be released into the turkey as the chips smolder. There is no need to cover the turkey with foil as it cooks. Simply lower the lid of the grill and baste every now and then. If it gets too hot, lift the lid and let it cool down a while. If it is not cooking fast enough, add more charcoal or turn up the heat. The delicious flavor of the turkey will be just reward for you and your guests.
