Dan Davis, founder and director of the Backyard Barbecue Association, demonstrates some portable barbecuing equipment that's perfect for picnics, camping or tailgate barbecuing.
The collapsible Pyromid barbecue weighs about four pounds and folds up to the size of a small briefcase. It features a raised base and a cooking chamber that holds nine pieces of charcoal and a cooking grate. The cooker can be used with an open flame for grilling, or the collapsible lid can be installed for roasting annd smoking. The top of the lid is hinged so you can lift it and check your food as it cooks. This cooker is perfect for cooking small pieces of meat or roasting marinated vegetables.
A portable charcoal smoker (figure A) works on the same principles as a full-size kettle grill or smoker. It is vented at the bottom (figure B) and top, so that you can control the airflow and intensity of the heat.
To use the portable smoker, remove the top grate and place charcoal briquettes in a small mound on the bottom grid (figure C). Soak the charcoal liberally with starter fluid for a few minutes and start your fire. Wait until the coals are covered in gray ash and all starter chemicals have burned off, before you start cooking. (You may want to use an alternative chemical-free starting method, such as an electric or natural-wood starter.)
The portable electric grill (figure D) is ideal for use in a motor home or camping vehicle when there is access to electricity. The electric grill cooks food with an electric heating element.
