Bruce Bjorkman, the author of Great BBQ Companion, offers tips on how to keep foods from sticking to your grill as you cook.
- Use a grill basket for grilling vegetables or other small items such as hamburger patties, small steaks, vegetables or small chicken pieces (figure A). It has a hinged top and a level surface to hold the food items secure, and it allows you to turn several items at once. The foods never come into direct contact with the grill surface.
- A porcelain-coated grill-topper is perfect for grilling mixed vegetables or other small items, such as shrimp (figure B). Place your food items on the surface and lay it on top of the grill for cooking. Grill-toppers are especially useful when cooking fish filets. Coat the topper with olive oil, which has a higher flame-point than vegetable oil or butter and is less likely to burn.
- A fish basket helps you overcome the problem of fish falling apart on the grill or sticking. Contoured in the shape of the fish (figure C), it keeps the whole fish intact while it cooks and makes it easy to turn and manipulate over the flame.
- A double-wide spatula makes it easier to get underneath large items on the grill so that they are less likely to fall apart when you turn them (figure D).
- Spray the grid of your grill with aerosol vegetable-oil spray before you begin cooking to help prevent items from sticking.
- Use a sheet of aluminum foil to serve as a makeshift cooking tray. Coat it or spray it with vegetable oil and lay fish, meat or vegetables on it for cooking. This makes it easy to remove your food once it's cooked. Simply lift the foil bed out by its edges using cooking mits. Once you're done, throw the aluminum foil away.
