 Skewered Shrimp and Chicken

Ingredients: One 5 oz. skinless, boneless chicken breast, divided in half 1 small spinach leaf Choice of seasonings (paprika, dill, garlic, dry mustard, salt and pepper) Lemon juice Skewer Preparation: Slice a pocket in the side of the chicken breast. Microwave the spinach leaf for 10 to 12 seconds. Wrap the leaf around the shrimp and insert it into the pocket of the chicken breast. Insert the skewer into the chicken breast. Pull the shrimp tails out slightly after you place them inside the chicken pockets. Coat chicken with seasonings and lemon juice. Grill over medium heat until chicken is firm and juices run clear.
