    Avocado and Melon Salad

    Ingredients for Salad:

    Lettuce of your choice
    1 California cantaloupe
    2 medium avocados
    One 14-oz. can hearts of palm
    2 Tbs. lemon juice

    Ingredients for Dressing:

    6 Tbs. lemon juice
    6 Tbs. lime juice
    1/2 tsp. white pepper
    1/2 tsp. ground ginger
    1/2 cup toasted almonds

    Preparation:

    Cut cantaloupe in half, remove seeds and dice melon. Peel and slice avocados into wedges and dice hearts of palm. Combine melon, avocado and hearts of palm in a bowl and top with 2 tablespoons lemon juice; toss ingredients and refrigerate for 1 hour.

    Place remaining lemon juice, lime juice, white pepper and ground ginger in a bowl and whisk together.

    Place lettuce in a bowl up to the sides and top with cantaloupe mixture. Pour dressing over salad and sprinkle with toasted almonds.
