    Watermelon Salad

    Ingredients:

    2 bunches watercress, roughly chopped
    1 bunch green onions, finely chopped
    2 stems parsley, chopped
    4 cups watermelon

    Ingredients for Dressing:

    1/2 tsp. sesame oil
    3 Tbs. sesame seeds
    1 shallot, chopped
    2 Tbs. rice wine vinegar
    2 Tbs. apple cider vinegar
    Juice from 1 orange, 1 lemon and 1 lime
    1 Tbs. olive oil
    1 Tbs. peanut oil
    2 tsp. Dijon mustard
    1 tsp. honey

    Place the watercress, onions and parsley in a bowl and mix together. Chop up the watermelon into chunks and add to the greens. Gently toss together and place in the refrigerator.

    For the dressing, place the sesame oil in a skillet and add the sesame seeds and stir until they turn a golden color. Watch carefully because the seeds will burn easily. Place in a bowl. Place the shallots, rice wine vinegar and apple cider vinegar in a blender. Add the juices from the orange, lemon and lime, the olive and peanut oil, the Dijon mustard and honey. Blend until it is real creamy.

    When ready to serve, take the dressing and drizzle onto the salad. Add some sesame seeds and lightly toss it all together. When ready to serve, add a little sesame seeds on top.
