    Stewed Apples

    Core apples and cut into rings, leaving a portion of the skin on (it helps hold the apple together). In a saucepan, flavor several pats of butter with whole cloves and a vanilla bean. Remove cloves and leave vanilla bean in pan. Add apples to pan and sprinkle nutmeg and cinnamon on top. Pour enough apple juice over apples to cover. Cover and let cook until tender. Top with additional cinnamon and nutmeg.
