    Culinary guru Margie Potts has a great recipe for a low-carb dish that’s fast and easy to make. And what’s even better, this recipe will please a whole crowd of people, because it’s so easy to personalize by adding your favorite garnishes. Here, she shows you how to make Asian Chopped Chicken Wraps. They’re like an Asian taco that you can top off with a spicy chili sauce that’s sure to light up your taste buds. Or for those not crazy about the heat, top it with a ginger sauce.

    Chinese Chopped Chicken Wraps

    Ingredients:

    1 lb. ground chicken or turkey
    1/4 cup green onion, minced
    2 Tbs. fresh basil or fresh parsley, chopped
    3 Tbs. soy sauce
    2 Tbs. fresh lime juice
    2 cloves garlic, minced
    1 large jalapeno or serrano chili, minced
    1 Tbs. sugar (optional)
    1 tsp. Chinese garlic chili sauce
    1 Tbs. Asian sesame oil
    1 Tbs. canola or peanut oil
    Iceberg or Boston whole lettuce leaves
    Sliced green onions
    Shredded carrot
    Roasted peanuts, coarsely chopped (optional)

    Steps:

    • Combine first nine ingredients in medium bowl and stir to blend well. (You can prepare 1/2 hour to one day ahead of time. Cover and refrigerate.)

    • Heat both sesame oil and canola/peanut oil in heavy medium skillet over high heat. Add chicken mixture and saute until turkey/chicken is cooked through, breaking up clumps with back of wood spoon or spatula, about five minutes.

    • Serve immediately with whole iceberg or Boston lettuce leaves. Place out small bowls of sliced green onions, finely shredded carrot and chopped roasted peanuts as garnishes. Scoop the meat mixture onto the lettuce leaf; top with garnishes of choice and drizzle a little sauce over mixture. Roll up filled lettuce leaf and eat!

    Wrap Sauces

    Chili Paste Wrappin’ Sauce (Hot)

    Ingredients:

    1/4 cup soy sauce
    1/4 cup rice vinegar
    1Tbs. chili oil
    1 Tbs. sugar (optional)
    2 green onions, sliced or chopped
    Asian chili paste or garlic chili paste to taste

    Combine first five ingredients, adding chili paste to taste. Serve with wraps.

    Ginger Wrappin’ Sauce (Mild)

    Ingredients:

    1/4 cup soy sauce
    2 Tbs. dry sherry
    1 Tbs. rice wine vinegar
    1 Tbs. Asian sesame oil
    1 green onion, sliced thinly
    1 tsp. grated fresh ginger
    1 Tbs. sugar (optional)

    Combine all ingredients. Serve with wraps.
