    Isaac Hayes
    Isaac Hayes, the original '70s soul man, grew up in Memphis, Tennessee. These days, music is still a creative outlet for him, but cooking is a close second! Today Hayes whips up Southern favorites such as barbecued ribs, heart-healthy turkey shanks, his famous apple coleslaw and homemade cornbread. The recipes come from his own series of recipe books as well as his restaurant, Music, Food, Passion, located in downtown Memphis.

    Isaac's Famous Ribs

    Ingredients
    Pork ribs
    Grapeseed oil
    Isaac Hayes's Memphis Magic dry rub

    1. Score lines on underside of ribs.

    2. Coat ribs with grapeseed oil.

    3. Add Isaac Hayes' Memphis Magic dry rub.

    4. For best results, place ribs in smoker for one hour.

    5. Finish in oven or on the grill.

    Isaac's Low-Fat Turkey Shanks

    Ingredients
    Turkey legs
    8 c. turkey or chicken broth
    1/2 Tbsp. garlic powder
    1 c. celery (chopped)
    1 c. carrots (chopped)
    1 c. onion (chopped)
    Salt and pepper to taste

    1. Cut turkey legs into shanks by removing skin and meat from lower quarter of each leg.

    2. In a bowl, combine vegetables, broth and spices.

    3. Pour mixture over turkey shanks and bake in a 325-degree oven for one hour.

    Isaac's Apple Coleslaw

    Ingredients
    Shredded cabbage
    4 red apples (chopped)
    1 c. mayonnaise
    2 oz. red wine vinegar
    1/2 Tbsp. celery seeds
    1/4 c. sugar
    3/4 c. Memphis Magic
    1/4 d. carrots
    Salt and pepper to taste

    1. Prepare dressing first by combining mayo and red wine vinegar. Add celery seeds, sugar and Memphis Magic; mix well.

    2. Add salt and pepper to taste.

    3. Add cabbage and carrots and finish with apples. Refrigerate before serving.

    Isaac's Southern Cornbread

    Ingredients
    2 c. buttermilk self-rising cornmeal
    1 egg
    1-1/2 c. milk
    3 Tbsp. grapeseed oil
    2 Tbsp. sugar

    1. Add egg and milk to cornmeal and mix well.

    2. Add grapeseed oil and sugar and mix again. You may continue to add milk until the consistency is the way you like it. It should be like cake batter.

    3. Fill muffin tins about halfway.

    4. Bake for 20 minutes at 350 degrees (some ovens may take longer).
