 Two tablespoons of bottled Caesar dressing can have as much as 150 calories and 16 grams of fat; this reduced-fat entree size has about 450 calories and is enough to serve friends. A single serving of the salad has only about 100 calories and 4 fat grams.

Q: I eat a lot of salads. Can you show me how to make a dressing that's low calorie, but flavorful? A: (Tim Harlan, M.D., aka "Dr. Gourmet") All of the fat and calories in salad come from the dressing. So you need to be careful of the kind you use. Here's a low-fat version of a classic Caesar. Ingredients: 2 cloves garlic (minced) 2 anchovy fillets 1/4 teaspoon ground black pepper 2 tablespoons fresh lemon juice 2 tablespoons dijon mustard 2 tablespoons honey 1-1/2 ounces parmesan cheese (grated) 1/2 cup nonfat plain yogurt 3 heads romaine lettuce (for entree size) 1 cup low-fat croutons 1/4 lb. shrimp (peeled, deveined and grilled) - Place the garlic, anchovies, pepper, lemon juice, mustard, honey, parmesan cheese and yogurt in a blender and process until smooth. Chill.
- Rinse lettuce and drain. Cut crosswise and place in refrigerator until needed.
- Toss dressing together with the romaine lettuce and croutons.
- Top salad with shrimp.
