    Mom's Spanish Chicken and Rice

    Ingredients:

    1 cup diced yellow onion
    1 Tbs. minced garlic, or to taste
    1 Tbs. vegetable oil
    1 jalapeno, finely diced
    1 green bell pepper, diced
    2 cups uncooked long grain rice
    3 cups chicken broth
    3/4 cup red chile sauce
    2 cups cooked diced chicken
    Salt and pepper to taste
    1 tsp. dried oregano flakes
    1/2 tsp. ground cumin
    Cilantro to taste
    Flour tortillas to taste
    Refried beans

    Preparation:

    Heat 1 tablespoon vegetable oil over medium heat. Saute 1 cup diced yellow onion and 1 tablespoon minced garlic until the onion is tender. Add 1 finely diced jalapeno and 1 diced green bell pepper. Add 2 cups uncooked long grain rice and mix. Add 3 cups chicken stock and 3/4 cup red chile sauce. Mix thoroughly. Add 2 cups cooked diced chicken. Season with salt and pepper to taste, 1 teaspoon dried oregano flakes, 1/2 teaspoon ground cumin and cilantro to taste. Cover and simmer until the liquid is evaporated.

    Serve with flour tortillas and refried beans.

    Servings: 4

    Chef's Note: My mother would never let food go to waste having 6 children, so, if there was leftover corn or peas in the refrigerator, she would put that in too.
