    Meat Loaf Sandwich With Elderberry Jam

    Ingredients:

    1 lb. lean ground beef
    1/2 lb. lean pork or Italian sausage
    1 cup seasoned bread crumbs
    1 egg, beaten
    1/2 cups milk
    1/4 cup minced onion
    2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. dry mustard
    1/8 tsp. ground sage
    1 sourdough loaf, sliced lengthwise
    6 red onion slices
    6 tomato slices
    Elderberry jam to taste

    Preparation:

    In a large bowl, combine 1 pound lean ground beef, 1/2 pound lean pork or Italian sausage, 1 cup seasoned bread crumbs, 1 beaten egg, 1/2 cup milk, 1/4 cup minced onion, 2 teaspoons salt, 1/4 teaspoon pepper, 1/4 teaspoon dry mustard and 1/8 teaspoon ground sage. Mix thoroughly. Pack into a greased 9" x 5" loaf pan, and make a checkerboard pattern on top with a with knife Bake in a preheated 350-degree oven for 1-1/2 hours. Allow meat to set up a bit before slicing, about 10 to 20 minutes.

    Cut meat loaf into thick slabs. If you have an indoor grill, you can put the slices on the grill to give the slices grill marks. Arrange onion and tomato slices on sourdough loaf. Top with sliced meat loaf. Add elderberry jam, cut into 5 to 6 inch sections.
