    Grilled Corn Salsa and Smoked Atlantic Salmon

    Ingredients:

    3 cups hot water
    1/2 cup brown sugar
    1/2 cup kosher salt
    1 gal. water
    3/4 cup lemon juice
    1 Tbs. Tabasco sauce
    3 lbs. salmon, skin on 1 side

    Preparation:

    In a large container mix 3 cups hot water, 1/2 cup brown sugar and 1/2 cup kosher salt with a whisk. Add 1 gallon cold water, 3/4 cup lemon juice and 2 ounces Tabasco sauce. Add 3 pounds of salmon with the skin on 1 side to the mixture and let soak for 1 hour in the refrigerator. Remove the fish from the mixture and place on a flat pan. Refrigerate without wrapping for 24 hours allowing the fish to air dry.

    Place fish in a smoker with low heat, about 140 degrees for about 30 minutes. Serve on individual plates or serving platter.
