    Chef Tracy Griffith shares some tips on making your own pizza.

    • Pizza as we know it all started when Italian immigrants began opening pizzerias wherever they settled around the globe. As the increasingly popular dish traveled around the world, it began to be topped by locals with some of their favorite foods.

      Americans consume about 350 slices of pizza every second. Nowadays there's a wide variety of pizzas to choose from: thin crust, thick crust, vegetarian, ham and pineapple, you name it.



    • Topping a pizza is as easy as -- well, pie. Brush oil onto the crust before baking. Pour marinara sauce all around the pie, leaving the edges bare. Sprinkle on grated mozzarella (figure A) and bake -- you can add fresh herbs when you take it from the oven. This is simple yet very tasty.



    • To make a delicious white pizza, oil the crust and add ricotta cheese, spreading it over the pie. Add several spoonfuls of basil and garlic pesto. Sprinkle mozzarella over the top and Parmesan over that (figure B) -- don't use as much Parmesan as you do mozzarella. Bake in the oven until done.



    • For a Shrimp Alfredo Pizza (figure C), oil the crust and spread store-bought or homemade alfredo sauce over the top. Add shrimp, shredded mozzarella cheese and parsley, basil and lemon zest.
    • A barbecue pizza can be made by spreading barbecue sauce on the pizza dough and adding chicken, yellow bell pepper strips, red onion slices, freshly chopped herbs of your choice and shredded mozzarella (figure D).



    • You can purchase a round pizza stone with a metal stand (figure E) at your local hardware store. Place the stone in a cold oven and preheat the stone and oven at the same time. Then place the pizza on the top of the stone. The porous tile will absorb the water in the dough and give you a crisp crust. If you can't find a pizza stone, you can use an unglazed terra-cotta tile (figure F) the same way you would a stone.
