Recipe courtesy Richard Jones. Ingredients: One 2-1/2-lb. chicken 2 cups canola oil Salt Black pepper 1 lb. flour Preparation: Cut the chicken into 8 pieces. Pour 2 cups canola oil into heavy iron skillet on moderately high heat. Season chicken with salt and pepper to taste, dredge in flour and shake off excess. Place chicken pieces, skin side down, in hot oil and fry until golden brown on the bottom. Turn with tongs and brown on the other side. Lower the heat if necessary to avoid burning. Continue to cook the chicken, turning once or twice until cooked through, about 20 to 30 minutes, depending on size of chicken and temperature of oil. Remove chicken from pan and drain well on paper towel. Serve hot or cold.
