Chef Michael Lomanaco gives tips on how to roast a top sirloin. Pour a small amount of olive oil in a pan and sear the beef, seasoning with salt and pepper to taste. Get a crusty edge to the beef before putting it in the oven (figure A). - Place onions in a roasting pan and season with salt, pepper and a little olive oil. Roast the onions in the oven at 425 degrees for 20 minutes, until the onions become caramelized. Once the beef is seared, place it on top of the onions and roast at 425 degrees, until it reaches 135 degrees for medium rare.
- Once the meat is done, slice it about 1/4" thick and serve over the onions.
