    Fish Mykanos

    Ingredients:

    3 bunches green onions or scallions, chopped
    1 medium tomato, sliced
    1 bunch fresh dill, chopped
    1/2 root anise, chopped (also known as fennel)
    5 lbs. grouper
    Salt and pepper to taste
    3/4 cup olive oil
    1/4 cup tomato juice
    1 lb. fresh spinach or 1 lb. frozen spinach that has been defrosted
    1/2 cup kalamata olives, sliced and pitted
    1/4 cup crumbled feta cheese
    1/4 cup extra virgin olive oil

    Preparation:

    Place 3 bunches of chopped green onions or scallions, 1 bunch fresh chopped dill and 1/2 chopped root anise in a medium bowl. Place 1 medium sliced tomato in a separate bowl. Place 5 pounds of grouper in large glass baking dish. Sprinkle with salt and pepper to taste. Add 3/4 cup of olive oil and 1/2 cup tomato juice. Coat fish well. Cook fish in a 350-degree preheated oven approximately 10 minutes. As the fish cooks, pour 1/4 cup olive oil into a large skillet.

    Saute the green onions, dill and anise. When they begin to soften, add the tomatoes. Add 1 pound fresh spinach or 1 pound defrosted frozen spinach and 1/2 cup sliced and pitted kalamata olives to the pan. Sprinkle with salt and pepper to taste. Add 1/4 cup crumbled feta cheese to the pan. Stir well. Add 1/4 cup tomato juice. Cover and simmer 5 minutes. Remove fish from the oven and top with vegetable mixture. Continue cooking fish in the oven an additional 10 minutes.

    Serve over rice or pasta.
