    Jerk Pork Chops

    Ingredients for the Pork Chops:

    5 lbs. pork
    5 garlic cloves, minced
    5 scallion stalks, chopped
    1 onion, chopped
    1 Scotch bonnet pepper, seeded and chopped (Note: This pepper is extremely hot, so be very careful and wash your hands thoroughly after handling)
    3 sprigs thyme, stripped

    Preparation:

    In a bowl, combine garlic, scallions, onion and Scotch bonnet pepper; add thyme, stirring to mix thoroughly. Thoroughly coat each pork chop in the mixture, then place on a plate and refrigerate for approximately 1/2 hour.

    Remove pork from refrigerator and pat Jerk Spice Mixture (see recipe, below) into each chop; return to refrigerator overnight.

    Grill the chops.

    Ingredients for Jerk Spice Mix:

    5 tsp. salt
    2 tsp. sugar
    2 tsp. dried pimiento berries (referred to as allspice because it has the blend and flavor of cinnamon, nutmeg and cloves all in one), ground in pepper grinder
    1 tsp. black pepper
    1/4 tsp. nutmeg
    1/4 tsp. powdered allspice

    Preparation for the Mix:

    Combine all ingredients and mix thoroughly.
