    Pecan-Crusted Pork Chops

    Ingredients:

    3 to 4 large, thick pork chops
    1 to 2 cups crushed peanuts
    Olive oil
    Salt and pepper to taste

    Ingredients for Caramelized Apple and Vidalia Onion Topping:

    Red and green apples
    Vidalia onions
    Salt and pepper
    1/3 cup butter
    1/4 cup maple syrup
    1 tsp. garlic

    Preparation:

    To crush peanuts, pulse in a food processor until they are the size of BB's. Brush pork chops with olive oil, sprinkle with salt and pepper and dredge in the crushed peanuts. In a skillet over medium heat, brown on both sides. Place on a baking dish and bake in preheated 375-degree oven for 20 minutes.

    For the topping, melt 1/4 cup butter in a saucepan over medium heat until bubbling. Saute onions and apples in butter for 1 to 2 minutes, then add garlic and salt and pepper to taste. When apples and onions have browned slightly, add maple syrup and heat on high for 3 to 4 minutes. Spoon over the pork chops.
