 Fresh Herb Chicken Breast

Ingredients: 4 skinless, boneless chicken breasts 3 cups chicken broth several sprigs fresh thyme 1 cup broccoli florets 1 cup julienned carrots 1/2 cup chicken broth 1/3 cup sliced scallions 2 Tbs. fresh thyme leaves 2 Tbs. chopped chives 1/4 cup chopped parsley Ingredients for the white sauce: 5 tsp. butter 2 Tbs. flour 1/2 cup milk pinch cayenne pepper 1/4 tsp. white pepper 1/2 tsp. salt 2 Tbs. white wine parchment paper or aluminum foil Preparation: Steam chicken breasts in broth; fresh thyme sprigs. When mixture comes to a boil, turn the heat off, cover and let cook in the liquid. Place broccoli florets and julienned carrots in a glass bowl with a little of the chicken broth. Microwave for 2 minutes to steam the vegetables. Melt butter and add 2 tablespoons flour to make a roux. Add cayenne pepper, white pepper and salt and stir until sauce begins to thicken; then slowly add milk. Add white wine, then sliced scallions and chopped thyme, chives and parsley; stir until blended. Cut a piece of parchment paper or aluminum foil approximately 12" or 14". Fold in half and cut into a heart shape. Lay flat on the counter and place a piece of chicken breast in the center. Drizzle sauce over the chicken; top with carrot and broccoli and more sauce. Fold paper over and crimp edges. Place in a roasting pan and bake in 350-degree oven for 20 minutes.
