    Red Snapper with Artichokes

    Ingredients:

    1/2 cup chopped green onions
    5 cloves garlic
    2 Tbs. olive oil
    1 can artichoke hearts, quartered
    1/3 cup white wine
    2 cups heavy cream
    1 lb. crabmeat
    1/2 cup Dijon mustard
    Dash of hot sauce
    Five 8 oz. snapper fillets
    Flour, salt and pepper
    1 stick butter
    Chopped green onion for garnish
    Paprika for garnish

    Preparation:

    Saute green onions and garlic in olive oil; add artichoke hearts and cook for a few minutes. Add white wine; cook until reduced to 2 tablespoons. Add heavy cream and cook until slightly thickened. Stir in crabmeat, Dijon mustard and a dash of hot sauce and allow to simmer a few minutes; remove the garlic cloves.

    Mix the salt and pepper with the flour and dredge thesnapper fillets in the mixture. Heat butter in a skillet; add snapper fillets and cook approximately 3 to 4 minutes on each side. Once fish is cooked, place the five fillets around a plate with artichoke mixture in the middle. Garnish with chopped green onions and paprika.
