    Cornish Game Hen With Vanilla Date Puree and Fuji Apples

    Ingredients:

    2 Cornish game hens (de-boned)
    2 Tbs. olive oil
    Salt and pepper to taste
    1 tsp. allspice
    1 lemon
    1 tsp. black caraway seed
    2 Fuji apples
    1 cup dry white wine
    1 Tbs. honey
    1 cinnamon stick
    1 tsp. tarragon, chopped fine

    Ingredients for Date Puree:

    1 cup dried dates (pitted)
    1 cup water
    1/2-1 vanilla bean (scraped)
    Pinch nutmeg

    Preparation:

    Cut 4 sections off the core of the apple and slice real thin. Saute the apples in a pan with a little butter and olive oil. Add 1 tablespoon honey, 1 cup dry white wine, 1 teaspoon tarragon, zest of 1 lemon and a cinnamon stick. Let this simmer for about 10 minutes until the apples cook in their own juices and the wine has evaporated. Reserve this in a warm area to be plated later on.

    Remove the bones from the hens and place the cut pieces in a pan. Place in a 13 by 9 baking dish and season with 1 teaspoon caraway seeds, 1 teaspoon allspice and the lemon. Let it sit at room temperature for a few minutes to absorb into the skin. Saute in a pan with half olive oil and half butter for about 2 minutes on each side until lightly browned. Transfer back into the baking dish and bake in 400-degree oven for approximately 8 to 10 minutes. It will be a medium rare at that point.

    In a saucepan, place 1 cup water, the dried vanilla bean, pinch of nutmeg and 1 cup dried dates. Simmer for 5 minutes to reconstitute the dates and then transfer to a food processor and process until smooth (about 2 minutes). Transfer to a piping bag with a star tip.

    To plate the dish, place a leg and thigh on the plate. Place a few apples at one end and then place the breast of the hen on top of the apples. Off to the right, do a date rosette. Spoon a little bit of the sauce from the apples and from the baking pan over the hen. Add a sprig of rosemary for the finish.
