    Fresh Salmon With Cucumber and Cream

    Ingredients:

    2 lbs. salmon filet
    2 Tbs. butter, melted
    salt and pepper, to taste
    1-2 Tbs. chives, chopped
    2 cups whipping cream
    2 medium cucumbers, peeled, seeded and cubed
    juice of 2-3 small lemons

    Preparation:

    Cut the salmon into 4 serving size pieces. Butter a baking dish and place the filets in the dish. Brush the filets with the melted butter. Season the filets with salt and pepper to taste. Sprinkle the chopped chives over the filets. Next, pour the whipping cream over the filets. Cover the baking dish with foil and then bake approximately 40 minutes at 350 degrees. The filets should flake when ready.

    Remove the filets from the oven and add the cucumbers and then pour the lemon juice over the filets. Return the filets to the oven and bake an additional 15 minutes, uncovered.
