    Roasted Garlic Pasta Primavera

    Ingredients:

    2 medium shallots, chopped
    3 garlic cloves, minced
    1 Tbs. olive oil
    2 cup white wine
    1 cup chicken broth
    1-1/2 cups heavy cream
    1 to 1-1/2 whole roasted garlic
    1 cup shitake mushrooms, sliced
    1 cup tomatoes, sliced
    1 cup black olives
    1 cup artichoke hearts
    3 cups cooked pasta
    1 cup fresh baby spinach
    1/2 cup white cheese
    Salt and pepper to taste
    Grilled chicken

    Preparation:

    Saute the shallots and cloves in olive oil. Add a cup of white wine and bring to a brisk boil and reduce in half. Add 1 cup chicken broth and reduce that in half again. Add 1-1/2 cups heavy cream to this and reduce that in half.

    After the garlic cloves have roasted in the oven, remove with a slotted spoon and leave a little bit of the oil on them. Put the roasted garlic and a little bit of olive oil into the saute pan. Add a cup of shitake mushrooms, tomatoes, black olives and artichoke hearts. Pour in some of the garlic cream sauce and let it cook down a little bit. Add the cooked pasta. Let this cook down and heat through.

    Add the baby spinach last. When this has cooked down, to bind the recipe together, add 1/2 cup white cheese. Add salt and pepper to taste. Pour onto plate and top with cubed grilled chicken.
