    Grilled Salmon with Sauteed Apples and Asparagus

    Ingredients for Salmon :

    Salmon steaks
    1/2 cup fresh raspberry vinaigrette
    1/2 cup walnut oil
    1/4 cup cilantro, chopped
    Salt and pepper to taste
    1 Tbs. lemon juice

    Preparation:

    Make a marinade by mixing 1/2 cup walnut oil, 1/2 cup raspberry vinaigrette, 1/4 cup chopped cilantro and salt and pepper to taste. Add a tablespoon of lemon juice. Pour over salmon and marinate for about 1-1/2 hours.

    Grill for 10 minutes per inch of thickness of steak on a medium-hot grill.

    Ingredients for Sauteed Apples and Asparagus:

    2 Tbs. olive oil
    1/3 cup pine nuts
    1 bunch fresh blanched asparagus
    2 medium apples, sliced

    Preparation:

    Saute pine nuts, asparagus and apples in olive oil for at least 2 minutes. Serve over grilled salmon.
