    Veal Caprese With Tomato Sauce

    Ingredients for Tomato Sauce:

    1/2 cup extra virgin olive oil
    3 cloves of garlic, peeled and sliced
    1 medium onion, diced
    10 large tomatoes, diced
    1 small bunch of fresh basil, chopped
    Salt and pepper to taste

    Preparation:

    Place olive oil and garlic in a large sauce pan. Allow garlic to get lightly browned. Add onions until both are browned. Add diced tomatoes, basil, salt and pepper. Cover. Simmer slowly until sauce thickens (approximately 2 hours). Stir occasionally. Set aside.

    Ingredients for Veal Caprese:

    12/ cup flour
    Salt and pepper to taste
    2 pounds veal scaloppini (thinly sliced veal)
    1/2 cup olive oil
    1/4 cup carrots, diced
    1/4 cup celery, diced
    3 Tbs. of Calamata or Greek olives
    2 Tbs. capers
    2 cups of prepared tomato sauce

    Preparation:

    Lightly coat veal with flour. Heat a medium sized pan over medium heat. Add olive oil to coat the bottom. Add carrots and celery, then stir to blend flavors. Add olives and capers and stir again.

    Place battered veal on top of the vegetable mixture and lightly brown on both sides. Add tomato sauce and cook until simmering.

    This is good to serve over pasta and with a salad.
