 Carolina Crab and Bean Salad

Ingredients: 1 medium tomato, diced 1 medium onion, finely chopped (about 3/4 cup) 2 celery ribs, finely chopped (about 1/2 cup) 1/4 cup chopped parsley 2 cups cooked, long-grain white rice 1-1/2 cups cooked black-eyed peas 1 lb. cooked blue crab meat 1/2 cup lightly flavored oil such as safflower Salt and freshly ground black pepper to taste Infused or flavored vinegar of your choice Preparation: Mix all of the ingredients together in a large mixing bowl until well blended and season with the oil and flavored vinegar. You can substitute the black-eyed peas for your favorite bean. You can also add your favorite flavor of spices. Let marinade in the refrigerator and serve chilled.
