    Cheese Quesadillas

    Ingredients:

    8 flour tortillas
    Shredded Brie cheese, 8 oz. round
    8 oz. shredded mozzarella cheese
    2 smoked chicken breasts, sliced
    Papaya, peeled and sliced

    Preparation:

    Take a tortilla and layer with cheese. Arrange papaya slices and add chicken. Top with second tortilla and push gently to set in place.

    Place quesadillas on a cookie sheet that has been sprayed with oil. Bake in oven for 8 to 10 minutes at 350 degrees. Let stand a few minutes and then cut into quarters. Serve with mango salsa.

    Chef's Notes: Brie cheese will grate much better if you freeze it first. If you try to grate it at room temperature, it will be a gooey mess.
