Ingredients: 1/4 cup butter 2 oz. flour 1 pint fish stock 4 oz. heavy cream Pepper to taste 2 fish fillets 1/2 onion, sliced 4 slices tomato 1/4 cup mushrooms, sliced 1 potato, peeled and sliced 1/4 cup Parmesan cheese Preparation: Melt butter in pan on high heat. Add flour and cook down. Pour in the fish stock and simmer until thickened. Add heavy cream, and pepper to taste. To assemble, add a spoonful of white sauce to the casserole dish and top with fish fillets. Layer onions, tomatoes, mushrooms and one potato. Top with white sauce and Parmesan cheese. Bake in a 400-degree oven for 20 to 30 minutes until it browns nicely.
