    Grilled Japanese Eggplant

    Ingredients:

    2 Japanese eggplants

    Ingredients for Ginger-Soy Dressing:

    1 Tbs. grated ginger
    1/2 cup soy sauce

    Preparation:

    Score eggplants lengthwise, just piercing the skin. Lightly oil the grill and heat to high. Grill eggplants until heated through (until the skin turns brown). Remove eggplants from heat and remove skins.

    In a bowl, combine grated ginger and soy sauce. (For a more intense flavor, let the ingredients marinate overnight.)

    Cut grilled eggplant into pieces and spoon Ginger-Soy Sauce dressing over the pieces. This is a quick and easy appetizer or a side dish!
