Ingredients: 2 Tbs. peanut oil 1 chili pepper, chopped 2 small or 1 large stalk lemongrass, tender part only, sliced 1 large clove garlic, chopped 1 Tbs. chopped fresh ginger 1 Kaffir lime leaf 12 jumbo shrimp 1/2 cup chicken broth Preparation: Process chili pepper, garlic and ginger until chopped fine. Stir-fry the garlic mixture, lemongrass and lime leaf in 1 tablespoon peanut oil for 1 minute, until fragrant. Add chicken broth and simmer for 15 minutes until the liquid almost evaporates. Remove the mixture from the pan. Add 1 tablespoon peanut oil to the pan and stir-fry shrimp until hot (if using cooked shrimp), or until pink (for raw shrimp). Return sauce to pan and mix well, until liquid evaporates. Serve immediately. Servings: 12 pieces Chef's Notes: - When using lemongrass use only the tender white part -- it is the part that is edible and digestible. The rest of the stalk can be used for seasoning, but be sure to remove it before serving.
- Instead of Kaffir lime leaf, you can use two strips of lime peel.
