Ingredients: 6 whole chicken breasts, halved 1/3 cup flour 1/4 cup vegetable oil 4 cups broccoli florets 2 Tbs. vegetable oil 1 cup fresh basil, chopped 6 cups spinach 12 slices prosciutto (a spicy ham rubbed with dry seasonings and aged for several months, rose-colored with a slight gloss and usually served very thinly sliced) 3 tomatoes, sliced 12 slices roasted red peppers Mozzarella to taste 12 oz. Alfredo sauce 6 oz. fresh crabmeat Preparation: Cut the chicken breasts in half and dredge in flour. Cook in vegetable oil until golden brown (approximately two-thirds of the way done). Saute broccoli in vegetable oil, add basil and saute until al dente -- (ahl DEN tay -- an Italian term meaning "to the tooth," used to describe cooking to the stage where it offers just a slight resistance when it is bitten). Fold the broccoli-basil mixture in a bowl with the spinach. Mix together until the spinach wilts. Place chicken breasts in an oiled or nonstick dish (approximately 12" by 9"). Place one or two slices of prosciutto on top of each chicken breast. Add the broccoli, basil and spinach mixture (2 to 3 tablespoons) on top. Follow with a layer of tomato slices, mozzarella and roasted red peppers. Heat Alfredo sauce and crabmeat and ladle over Fiesta Chicken. Salt and pepper to taste. Bake in 350-degree oven for 30 to 40 minutes. Serves 5 to 6. Chef's Notes: - You can make this the night before. Just set it out about 30 minutes before you're going to bake it.
- You can turn the oven down once the dish has baked; it should be okay for another hour or so keeping warm in the oven.
- Add a wild-rice or pasta dish and a simple dessert, and you have a great meal!
