 Pinwheel Steaks with Parsley Pesto

Ingredients: 2/3 cup pesto 1/4 cup extra virgin olive oil 3 Tbs. water 1 Tbs. fresh lemon juice Kosher salt to taste Two 12-oz. New York strip steaks, about 1" thick 2/3 cup roasted red peppers 2 Tbs. vegetable oil 1 tsp. kosher salt 1/2 tsp. pepper Eight 10" to 12" metal or wooden skewers (soak wooden skewers in water for 30 minutes -- soaking prevents them from splintering and from burning in the oven or grill) Preparation: Preheat oven to 475 degrees. Line a baking sheet with foil, then brush with half the vegetable oil. Trim any excess fat from the meat and pat dry. Sandwich the steaks between two pieces of plastic wrap. Pound each steak, using a mallet or a heavy pan, until half its original thickness, about 1/2". Remove the plastic wrap and season the steaks with salt and pepper to taste. Spread the steaks evenly with half the pesto (reserve the other half to make the pesto drizzle), then cover with a single layer of roasted red peppers. Roll the steaks up tightly. Slice each roll in half; skewer each half crosswise with two skewers so the pinwheel won't unravel. Season with salt and pepper to taste. Place the pinwheels on the pan and brush with remaining vegetable oil. Bake in the center of the oven about 15 minutes for medium rare. Serve each pinwheel with the pesto drizzle. Preparation for the pesto drizzle: Whisk the remaining pesto, olive oil, water and lemon juice. Salt to taste.
