California Onion Dip Without a Mix

    Recipe courtesy Elaine Corn.

    Ingredients:

    8 oz. softened cream cheese
1 very lrg. onion (yellow or white)
    2 Tbs. vegetable oil
    2 cups sour cream
    1-1/2 Tbs. Worcestershire sauce
    Tabasco sauce to taste
    1 Tbs. dried parsley flakes

    Preparation:

Peel and slice 1 large onion and caramelize it in 2 tablespoons vegetable oil on low heat. Let cool.

In a blender, food processor or with portable electric mixer, blend the onion with 8 ounces of softened cream cheese, 2 cups of sour cream, 1-1/2 tablespoons Worcestershire sauce, Tabasco sauce to taste and 1 tablespoon dried parsley flakes. Blend until smooth.

    Servings: 3-1/2 cups

Chef's Note: If you want to use fresh chopped parsley, use 2 tablespoons of finely minced. Do not substitute yogurt for the sour cream, because it will make the dip runny.
