    Christine's Tomato Salsa and Peach and Red Onion Salsa

    Ingredients:

    1/2 cup finely chopped red onion
    1/2 tsp. Kosher salt
    1-1/2 Tbs. fresh lime juice
    2 ripe peaches (about 2 cups), peeled, pitted and cut into 1/2" dice
    1 jalapeno pepper, seeded and finely chopped
    1 Tbs. chopped fresh mint
    1 tsp. sugar or to taste

    Preparation:

    In a small bowl, toss 1/2 cup finely chopped red onion with 1/2 teaspoon Kosher salt and 1-1/2 tablespoons fresh lime juice. Let this sit for 30 minutes to pickle slightly.

    Just before serving, stir in 2 ripe peeled and seeded peaches, 1 finely chopped jalapeno pepper, 1 tablespoon chopped fresh mint and 1 teaspoon sugar. Use about 1/2 cup of the salsa per serving. The salsa is best made fresh, but it will keep overnight, covered, in the refrigerator.

    Servings: 2-1/2 cups

    Chef's Note: Make this easy salsa in July or August, when peaches are at their best. Serve it as a condiment with Grilled Pork Kebabs in Tequila and Lime Marinade or marinated Grilled Pork Chops. Marinating the onion first in lime juice and salt helps to take away the sting of the onion and gives it a lightly pickled flavor.
