    Bay Wolf BBQ Potato Chips, Bruschetta Steak Sandwiches, Diana's Devil Dish, Steak Marinade, Tomato-Olive Salsa

    Ingredients:

    3 Tbs. extra virgin olive oil, preferably Tuscan
    2 tsp. kosher or other coarse salt
    1 tsp. freshly ground black pepper
    1 Tbs. minced garlic (optional)
    1/2" to 2-1/2" thick Porterhouse steak (2-3 lbs.)
    2 cups hickory or oak chips (optional)

    Preparation:

    Combine extra-virgin olive oil, kosher salt, freshly ground black pepper and minced garlic in a small bowl. Place the steak in a shallow bowl or dish and rub the mixture all over the meat. Marinate for 1 to 2 hours at room temperature or, better still, covered in the refrigerator for up to 2 days. Turn the meat from time to time to coat both sides evenly.

    Remove steak from refrigerator for at least an hour before cooking. When you're ready to grill, prepare a charcoal fire so that you have areas of higher and lower heat.

    Drain off any excess oil from steak. Sear steak over high-heat area of the grill for 3 to 4 minutes per side. Remove grill rack and sprinkle soaked hickory or oak chips (optional) on the low-heat area. Replace grill and place steak over low-heat areas. Cover grill and turn steak frequently; this should take 10 to 20 minutes more, depending on the thickness of the steak and the heat of the fire.

    Let the steak rest, covered loosely with foil, for 10 minutes or so before carving. This is a great way to prepare the steaks for Bruschetta Steak Sandwiches.
