    Spring Salad with Feta Cheese Dressing

    Recipe courtesy Jeff Smalley, of Huntsville, Alabama.

    Ingredients:

    4 handfuls spring-mix lettuces
    12 blanched and cooled asparagus spears
    1/2 cup thinly sliced cucumber
    1/2 cup baby carrots, chopped
    1/4 red onion, sliced into thin rings
    1/4 cup mayonnaise
    1 tsp. sugar
    1/2 cup milk
    1/2 cup feta cheese crumbles
    Salt to taste
    Black pepper to taste

    Preparation:

    In a large bowl, combine lettuces with blanched and cooled asparagus, thinly sliced cucumber, chopped baby carrots and red-onion rings.

    In a separate bowl, combine mayonnaise, sugar, milk and 1/4 cup feta cheese (reserve remaining 1/4 cup for garnish). Whisk until mixed thoroughly. Pour dressing over salad. Toss gently and season with black pepper. Serve in large bowl or in individual salad bowls. Top salad with remaining 1/4 cup feta cheese crumbles.
