 Sweet Corn, Jicama and Baby Spinach Salad with Tequila Lime Dressing

Ingredients: 6 ears corn 2 jicama, peeled and julienned 3 heads baby spinach, cleaned Tequila-Lime Dressing (recipe below) 1 red pepper, finely diced 1 yellow pepper, finely diced 2 tablespoons pine nuts Preparation: Cook corn in salted boiling water until tender; remove from cob. Toss clean baby spinach, jicama and corn together and dress with Tequila-Lime Dressing. Divide evenly between 6 plates and garnish with diced peppers and pine nuts. Servings: 6 Ingredients for Dressing: 3 limes, juiced 2 Tbs. tequila 1 tsp. white wine vinegar 1/2 cup olive oil 1 pinch cumin 1 pinch cayenne Preparation for Dressing: Put all ingredients for the dressing, except oil, in a medium saucepan and bring to a boil. Using a whisk, slowly emulsify oil into boiled base.
