    Beer-Can Chicken

    Ingredients:

    1 chicken (4-5 pounds)
    3 Tbs. Memphis rub
    One 12 oz. can beer
    Bag of wood chips for the grill

    Ingredients for Memphis Rub:

    1/4 cup paprika
    1 Tbs. brown sugar
    1 Tbs. granulated sugar
    2 tsp. salt
    1 tsp each: celery salt, black pepper, dry mustard, garlic powder and onion powder
    1 to 3 tsp. cayenne powder (use less for a milder rub)

    Preparation:

    For the Memphis rub, combine paprika, brown sugar, granulated sugar, salt and celery salt in a bowl. Add black pepper, cayenne pepper, dry mustard, garlic powder and onion powder and mix well.

    Sprinkle and generously pat the Memphis rub onto the chicken inside and out. Open the beer can and poke 2 or 3 holes in it. Pour out half of the beer and use it to soak the wood chips (which will be placed on the coals). Also sprinkle some of the Memphis rub into the beer can. Lower the chicken onto the beer can and place it in the center of the grill. Cover grill and cook chicken for about 1-1/2 hours. As the chicken cooks, the beer evaporates and makes for a very moist chicken.

    Servings: 2 to 4
