    Spicy Chicken with Lemongrass

    Ingredients:

    1 stalk fresh lemongrass, peeled and chopped
    4 boneless, skinless chicken thighs, cubed
    1/2 red bell pepper, diced
    2 cloves garlic, chopped
    1 Tbs. nuoc mam (Vietnamese fish sauce)
    2 tsp. sugar
    Pepper to taste
    1 Tbs. vegetable oil
    1 clove garlic, chopped
    1 Tbs. nuoc mam
    1/4 tsp. cayenne pepper powder

    Preparation:

    Place chicken in a bowl; add diced bell pepper and sprinkle with garlic, lemongrass, 1 tablespoon of nuoc nam, sugar and pepper. Mix thoroughly and allow to marinate in the refrigerator for 30 minutes.

    Heat vegetable oil in a skillet over high heat; add chopped garlic and saute. Add chicken mixture and cook, stirring mixture often to allow chicken to cook throughout. Reduce heat to medium; add 1 tablespoon of nuoc mam and 1/4 teaspoon of cayenne pepper powder and cook for additional 5 minutes.
