 Quick Bites: Vietnamese Seasonings
|
The Vietnamese know that the way to get maximum flavor from herbs and spices is to grind them together with a mortar and pestle -- grinding releases the essential oils and the taste, especially for garlic and peppers. You can then saute the ingredients in about a tablespoon of oil before mixing them with other ingredients. This technique adds incredible taste to any dish. We at DIY believe all of the recipes from All in Good Taste are accurate and reliable, but since we have not tested them personally, we can claim no responsibility if the desired results are not achieved.
