    Quick Bites: Vietnamese Seasonings

    The Vietnamese know that the way to get maximum flavor from herbs and spices is to grind them together with a mortar and pestle -- grinding releases the essential oils and the taste, especially for garlic and peppers. You can then saute the ingredients in about a tablespoon of oil before mixing them with other ingredients. This technique adds incredible taste to any dish.
