    Roasted Corn Salsa

    Ingredients:

    5 ears corn
    2 tomatoes, diced
    1/2 red onion, diced
    2 jalapeno peppers, chopped
    1 bunch basil, chopped
    1/2 cup olive oil
    Juice of 1 lime
    Salt and pepper to taste

    Preparation:

    Wash ears of corn and soak in water. Grill corn, cool and remove from the cobs. Place the corn in a bowl, using your fingers to break up any chunks, and stir in remaining ingredients.

    Chef's Notes:

    • This is great with chicken or fish.

    • All by itself or as part of a basket of goodies, this would make a great gift for your family and friends. Just pack it in an attractive jar or other type of container.
