Note: Confit (kohn-FEE) is any type of food that is cooked for a long time to help preserve it. Ingredients: Twelve 1/2" slices sweet onion 1-1/2 cups chicken broth 1/4 cup olive oil Salt and pepper to taste 2 Tbs. freshly chopped parsley Preparation: Slice the onion into 12 1/2" slices and place on a paper-lined baking sheet. Pour 1-1/2 cups chicken broth and 1/4 cup olive oil over the onions. Sprinkle with fresh chopped parsley and salt and pepper to taste. Cover the baking sheet with foil and bake in a 350-degree oven for 20 minutes. Remove the foil and let the onions brown for an additional 10 minutes. Remove from the oven and let cool.
