    Ingredients:

    6 mangoes, peeled and chopped
    8-10 cloves garlic, peeled and sliced
    1" piece fresh ginger root, peeled and chopped
    1 cup light brown sugar, packed
    Salt to taste
    1 tsp. ground dried red chilis, or to taste
    1 cup cider vinegar

    Preparation:

    Thinly slice the mangoes and place in a bowl with remaining ingredients. Mix thoroughly.

    Transfer to a saucepan and bring to a boil. Reduce heat to low and allow to simmer for 30 to 40 minutes. Stir occasionally so that mixture doesn't stick. Let cool before serving.

    Chef's Notes:

    • This chutney is a great addition to a hostess gift (figure A).

    • Place an Indian-style napkin in a silver bowl with a bit of moss (figure B ). Pack mango chutney in a glass jar, attach the recipe and place in the bowl (figure C).

    • Add a container of dal (DAHL -- a spicy dish made with lentils, tomatoes, onions and various seasonings) and several cinnamon sticks in a stainless-steel bowl, both tied with raffia; whole fennel seeds in a small glass jar; jar of cardamom (KAR duh muhm -- a pungent and aromatic spice with a flowery sweetness that's a little like ginger) pods; a jar of turmeric; and a jar of garam masala (gah-RAHM mah-SAH-lah -- a blending of ground spices, available at specialty grocery stores).

    • It's nice to label the jars (figure D) so that the hostess will know what's in them!
