    Prawns With Citrus Salsa

    Ingredients:

    4 count prawns

    Caribbean Rub Ingredients:

    2 Tbs. cinnamon
    2 Tbs. cumin
    2 Tbs. red chili powder
    2 Tbs. curry
    1 Tbs. cayenne
    2 Tbs. black pepper
    4 Tbs. Kosher salt
    1 Tbs. allspice

    Citrus Salsa Ingredients:

    1 blood orange
    1 lime
    1 pink grapefruit
    2 scallions, sliced
    2 stems cilantro
    1 Tbs. vinegar
    Sugar to taste

    Preparation:

    Clean, peel and bend the prawn. Blend together the cinnamon, cumin, red chili powder, curry, cayenne, black pepper, Kosher salt and allspice for the Caribbean rub and sprinkle lightly over the prawns. Pan sear the prawns and then place in baking dish and bake at 400 degrees for approximately 10 minutes.

    For the salsa, cut the top and bottom off of each fruit and then peel around the membrane. Remove each segment between the membranes and place all of the fruits in a bowl. Add the 2 tablespoons scallions, 2 stems chopped cilantro, the tablespoon of vinegar and sugar to taste. Mix all this together.

    Chef's Note: This is good served with rice pilaf. Place the pilaf in the center of plate and lay the prawns on top. Place some salsa on the side. You can place fruit segments around the plate for a more festive look.
