Ingredients: 1 lb. raw cashews, shelled 1 tsp. salt 1 tsp. sugar2 Tbs. peanut oil, more as needed Preparation: Roast the cashews and place 1/3 of them in a food processor or blender. Coarsely chop and set aside. Process the remaining nuts with the salt, sugar and peanut oil until they reach a smooth consistency. Add the coarsely chopped cashews and stir and you have a crunchy gourmet butter.
