Ingredients: 4 oz. fresh mint (approximately 1 large bunch) 1/3 cup boiling water 1 Tbs. sugar 1/3 cup cider vinegar 1/4 tsp. kosher salt Preparation: Remove mint leaves from the stem, then wash, dry, and finely chop them. Place in a small bowl. Add 1/3 cup boiling water. Stir in sugar. Let stand until cool to the touch, about 15 minutes. Stir in cider vinegar and kosher salt. Serve immediately for best color.
